Celeriac au Gratin

From A-Z cookbook. Makes- 4-6 servings. Recipe contains dairy.


  • 2 large or 4 small celeriac bulbs,  peeled, sliced into 1/8-inch pieces
  • 2 T. butter
  • 1 T. flour
  • 1 cup chicken or vegetable stock
  • salt and pepper to taste
  • 1 Cup grated Swiss or cheddar cheese


  1. Simmer celeriac in water over medium heat until tender, 15-20 minutes. Drain.
  2. In medium saucepan, melt butter, add flour, and cook until golden.
  3. Slowly whisk in stock; cook until thickened. Add salt and pepper.
  4. Place drained celeriac in shallow baking dish; top with sauce, sprinkle with cheese, and bake at 375 degrees until golden, about 15 minutes.
