A few years ago I learned to really enjoy fennel. It was this time of year and I lost my appetite because it wouldn’t stop raining and I was so anxious. The only thing that was appetizing to me was crispy refreshing fennel.
Here’s what I did:
-make some toast
-spread some goat cheese on it, or cream cheese would work as well
– slice the fennel bulb in 1/4 inch slices. When you do this it comes apart in half-moon shaped wedges
– top your toast with the fennel
The fennel is also refreshing just sliced and eaten by itself or tossed in your salad. Give it a try! I know it’s a new one for most folks, but it has real potential.
(This would be great with kohlrabi or cucumber, too!)
