Freezing chard or spinach

Too many greens? Blanch your chard or spinach in boiling water for 30 seconds, take it out and run it under cold water, squeeze the excess liquid out, put it in a ziploc bag and toss it in the freezer. The longest part of the process is waiting for the water to boil.

Use your frozen greens in wintertime bean soups and stews. I like to make red pepper, chard and chicken enchiladas. Add it to your tomato sauce. Your body will appreciate any greens you can get into your diet in the dead of winter.
