Frozen Red Peppers

The red pepper crop has been quite nice this season. If you find your crisper drawer overflowing with the red gems and you don’t have a recipe in mind to utilize them for the week, don’t hesitate to through them in the freezer. Frozen red peppers are a staple of my winter diet. I add them to chili, tomato sauce, chicken enchiladas, venison stir-fry, and all sorts of soups. Peppers are one of the easiest veggies to freeze because they don’t require blanching. Here’s what you do:

  1. Seed the peppers
  2. Chop them up into whatever size pieces you like to cook with
  3. Throw them in a ziploc freezer bag
  4. Place the bags in a neat stack in your freezer
  5. Enjoy all winter long!
