Bird’s Nest

This is what I do for a quick breakfast.

  • a couple of big hand fulls of greens- i.e. spinach or bok choy
  • an egg
  • salt and pepper

Saute the greens in a skillet with a little butter or oil until they are nice and wilted. Salt and pepper them. Form them into a little nest in the middle of the pan. Crack an egg into the nest and scramble it a little bit. Cook for a minute and flip, keeping the greens and egg together in a little patty. Cook another minute and it’s done. I’m not sure why, but eggs and cooked greens go really well together. It’s a good way to use up a lot of greens.
