Go ahead and add some cheese to make it broccoli cheese soup- cheddar works great! Recipe contans dairy.
Ingredients:
- 2 T. butter
- 1 1/2 C. chopped onion
- 1 bay leaf
- 1 t. salt
- 1 medium bell pepper, diced
- 4 C. chopped broccoli
- 2 1/2 C. water
- 2 C. milk
- 1/2 C. sour cream
- 1/4 t. allspice
- Black and white pepper to taste
- Dash of thyme
- 1/2 t. basil
- 1 C. broccoli florets, sliced thin and lightly steamed
Steps:
- Saute onion, bay leaf and salt in butter.
- Add green pepper, chopped broccoli and water; cover; simmer 10 minutes. Remove bay leaf and puree the soup in a food processor.
- Whisk in sour cream and remaining seasonings. Serve hot topped with lightly steamed broccoli florets. Serves 4-6
