Pasta and Greens with Tahini Sauce

My lovely house mates just made this recipe for me for dinner tonight and it was incredibly delicious and at the same time very, very simple and quick. I devoured my plate. Give it a try. You could really add anything from your box, but we used spinach, greens mix and some tat soi. Recipe contains sesame.

Ingredients:

  • 3 Tbsp tahini
  • 2 Tbsp water
  • 1 Tbsp seasoned rice vinegar
  • 2 Tbsp soy sauce
  • 2 tsp toasted sesame oil
  • 2 tsp honey
  • 1/2 tsp salt
  • 2 cloves of garlic, minced
  • 6-8 cups uncooked greens (spinach, greens mix, bok choi, kale, broccoli, romanesco, scallions)
  • 4 servings of angel hair pasta
  • olive oil

Steps:

  1. Mix the first 8 ingredients to make the sauce.
  2. Heat a little oil or butter in a fry pan and sauté a mixture of greens. Add a little salt and pepper to season. They will only take 2-3 minutes to sauté, so no need to overcook them.
  3. Cook up the angel hair pasta and drain. When the pasta is done, toss it with some olive oil and then toss it with the tahini sauce and the mixed greens.
  4. Optional: serve with a big lettuce salad and a plate of cheese.

Really, it was surprisingly delicious and I plan on making some more tomorrow night!
