Kohlrabi Sandwich

  • unsalted butter, softened
  • pumpernickel bread
  • thick sliced kohlrabi
  • sea salt and freshly ground pepper


  1. Generously butter two slices of bread and make a sandwich with the kohlrabi as the “meat”. Add salt and pepper to taste.
  2. (I think this would make nice appetizer finger sandwiches, too. You could spread a little veggie dip on the bread instead of butter.)
