Lasagna Basics

So many nice veggies this week- you could make a killer lasagna. I never follow a strict recipe when making lasagna. These are the general steps I follow.

Make a tomato sauce. Start by sautéing some onions and garlic and then add in a bunch of chopped tomatoes and herbs. Cook down until it’s thick. Red wine is always a delicious addition to a tomato sauce.

Saute a medley of vegetables. With this box I would put in diced carrots, a leek, peppers and broccoli or spinach. Saute everything until tender. Make sure you season with salt.

Get plenty of mozzarella and ricotta and Parmesan cheese at the store. Cook up some lasagna noodles and begin layering the ingredients in a large baking dish. Start with a little bit of sauce, then noodles, veggies, cheese, sauce, noodles, veggies, cheese, sauce, noodles, sauce and cheese.

Serve with a nice bowl of salad mix or a spinach salad.

Have delicious leftovers all week for lunch when you are too busy to spend a lot of time in the kitchen.
