Recipe contains eggs and dairy.
Ingredients:
- 1 C. flour
- 1 C. whole wheat or rye flour
- 1 t. baking soda
- ½ t. salt
- 1 t. cinnamon
- ½ t. ginger
- ¼ t. cloves
- 1/8 t. nutmeg
- ¾ C. brown sugar
- 3 T. molasses
- ¼ C. Canola oil
- 2 large eggs
- 1 C. cooked pumpkin
- 1 t. vanilla
- ¾ C. buttermilk
Steps:
- Grease a 12 muffin tin or use paper cups. Whisk together flours and spices. Whisk in sugar, molasses, oil and eggs. Add pumpkin and vanilla. Mix. Add buttermilk. Mix.
- Fill cups 2/3 full. Bake at 350 for 20 minutes.
