Recipe ideas from Farmer Laura’s Kitchen (August)

*How about a nice summer pasta salad. Roast in the oven or sauté a huge pan of chopped
eggplant, summer squash, fennel, onion, and carrots. Toss with pasta and a nice vinaigrette or just
use the roasted veggies as a side dish.

*Don’t be afraid of that cabbage. My favorite way to get it out of my fridge and into my belly is to
chop up the whole thing (just do it!) and put it in the crock pot with a pork shoulder roast and lots of
onions. Start the braise with a little bit of beer, be sure to season the roast with plenty of salt and
pepper. I followed a recipe once that threw in some sausage as well and that added a lot of nice
flavor. If I don’t have pork sausage in the freezer, I will just sprinkle some sausage seasoning into the
pot–salty, herby, delicious.
