*I had dinner with some farmer friends last night and we had a giant platter of grilled hamburgers with blue cheese, grilled zucchini and summer squash thick slices, grilled onions and a tasty lettuce salad. A perfect, simple easy summer meal and four of us mowed down a good portion of a CSA box.
*Make some thinly sliced quick pickles in your fridge with all of those cucumbers. Makes a refreshing salad for most summer meals.
*Turn your sautéed fennel and squash into a whole meal by adding some browned sausage or diced up leftover brats and serving it over a bed of crunchy lettuce, rice or steamed potatoes. Top with a fried egg for an even heartier meal. Same ingredients as the zucchini, fennel, andouille pie recipe above, but a little quicker and off the cuff. Be sure to throw some scallions in there and green beans would work too!
