Carrot Mushroom Loaf

  • 2 Cups minced onion
  • 1 T. butter
  • 1 lb mushrooms, chopped
  • 1 1/2 t. salt
  • 1 t. basil
  • 1 t. thyme
  • 1 t. dill
  • 4 cloves garlic, minced
  • 1 1/2 lbs carrots, grated
  • 2 Cups breadcrumbs
  • 1 Cup grated cheddar
  • 2 eggs, beaten
  • black pepper, to taste
  • Optional toppings: extra dill, cheese, bread crumbs, a sprinkling of sesame seeds

Lightly oil a 9×13 inch baking pan. Preheat oven to 350.

In a large skillet, saute onions in butter for 5 minutes. Add mushrooms, salt, herbs and garlic, and continue to saute for about 10 more minutes.

In a large bowl, combine carrots, bread crumbs, cheese, eggs and pepper. Add the sauteed mixture and mix well. Spread into the prepared pan and sprinkle with your choice of toppings. Cover the pan with foil.

Bake for 30 minutes covered, then uncover and bake 15 minutes more. Serve hot or warm.
