Harvard Beets

This is a wonderful dish for family holiday dinners. The tang of the orange juice and the earthy flavor of the beet marry a wonderful balance to any meat entree.

  • 1/4 cup sugar
  • 1 Tbsp cornstarch
  • ½ tsp kosher salt
  • ½ cup orange juice
  • 1 Tbsp butter or margarine
  • 1 tsp grated orange peel
  • 2 lbs cooked sliced beets. (Equals 6 cup)

In a 1 quart saucepan, combine sugar, cornstarch and salt; slowly stir in orange juice; add butter and orange peel; over medium heat, cook until thickened, stirring constantly.

Reduce heat to low; add beets and cook just until heated through, stirring occasionally.

transfer to serving dish and garnish with orange twist and fresh chopped parsley.
