This is a wonderful dish for family holiday dinners. The tang of the orange juice and the earthy flavor of the beet marry a wonderful balance to any meat entree. Recipe contains dairy.
Ingredients:
- 1/4 cup sugar
- 1 Tbsp cornstarch
- ½ tsp kosher salt
- ½ cup orange juice
- 1 Tbsp butter or margarine
- 1 tsp grated orange peel
- 2 lbs cooked sliced beets. (Equals 6 cup)
- parsley for garnish
Steps:
- In a 1 quart saucepan, combine sugar, cornstarch and salt; slowly stir in orange juice; add butter and orange peel; over medium heat, cook until thickened, stirring constantly.
- Reduce heat to low; add beets and cook just until heated through, stirring occasionally.
- Transfer to serving dish and garnish with orange twist and fresh chopped parsley.
