Ok, here’s what we have:

Curry recipe from below (Thai Red Curry with Potatoes and Greens), with potatoes, carrots, the whole bok choi and onions.
Sliced and roasted butternut squash, spinach salad, and a lentil dish- maybe some dahl- or
another protein.
Warm salad- big bowl of salad mix or lettuce dressed with a dijon vinaigrette and topped with
sautéed venison, butternut squash and spinach. Also throw a chopped apple and nuts on top
for some crunch.
Romanesco, garlic and cabbage sauteed with a little bacon. Tossed with pasta, salt, pepper
and parmesan cheese. Serve with a spinach salad.
Bok choi, carrots and radishes sauteed with lots of garlic over rice. Make a peanut sauce,
too, if you’d like.
Spinach and egg frittata. Saute spinach and onions in cast iron skillet, add a whole bunch of
eggs scrambled and poured over top, grated cheese mixed in there, too. Put it in the oven.

Just throw whatever you have left before the next CSA box in the oven with a little oil and salt
and pepper. The roasted veggies make a quick reheated lunch or breakfast with a side of
eggs, mashed potatoes or meat. Cook a bunch at once and then eat them in different ways
all week.
