Roasted Peppers

The following recipe can be made using bell peppers of any color. It is most attractive and appealing when a variety of peppers are used such as green, purple, red, yellow, orange, etc.

Ingredients:

  • 3 medium sized peppers
  • Salt
  • Crushed red pepper flakes
  • Olive Oil
  • Cooking Spray

Steps:

  • Preheat oven to 350 degrees and while oven is heating up, cut pepper open lengthwise. Take out seeds and discard. Rinse peppers inside and out. Cut the peppers in half inch slices.
  • Spray a cookie sheet with cooking spray and place the peppers on the sheet so that they are not overlapping. Put pan in preheated oven and let cook for 20 minutes. Remove pan from oven and turn up heat to 450 degrees.
  • While waiting for oven to heat to the higher temperature, drizzle olive oil over peppers (not more than to make them glisten), salt to taste and generously sprinkle with crushed red pepper flakes. Stir peppers to evenly distribute the oil, salt, and crushed flakes. Separate peppers so that again they are not overlapping and put them back in the oven.
  • Cook peppers for another 20 minutes or until lightly brown and crisp. These peppers are wonderful on top of Italian sausage sandwiches as well as Italian beef sandwiches. They can also be used to make an omelet of peppers, eggs, and provolone cheese.
