My favorite way to eat my summer squash–probably because of the cheese!
Ingredients:
- a few summer squash, sliced
- a few small onions, sliced thinly
- 2 T. butter
- 1/2 C. shredded Parmesan cheese
- salt and pepper to taste
Steps:
- In a medium skillet saute the onions in the butter until they begin to turn brown and caramelize, about 5-7 minutes. Add the summer squash, salt and pepper and saute for a few more minutes, until the squash are tender.
- Turn off the heat, sprinkle Parmesan cheese over the top of the veggies and cover until the cheese is melted. Serve warm to other people or eat it all yourself! And don’t be afraid to add extra cheese.
- You could also add some fresh basil.
