I know this might be a little out there for some people, but these waffles rock. I like to eat them with sour cream and cinnamon apple sauce. I have been know to make them with a cheese sauce, heart attack on a plate. Remember everything in moderation. Recipe contains dairy and eggs.
Ingredients:
- 1 cup all-purpose flour
- 2 Tbsp sugar
- 2 tsp baking powder
- ½ tsp salt
- 2 eggs
- 1 ½ cup mashed golden potatoes (with added milk and butter)
- 1 cup 2% milk (at least)
- 5 Tbsp canola oil
- 1/4 cup finely chopped onion
- 3 bacon strips, cooked crispy, and crumbled
Steps:
- In a large bowl, combine the flour, sugar, baking powder and salt. Mix and set aside.
- In another medium bowl, whisk eggs potatoes, milk and oil.
- Stir wet ingredients into dry ingredients just until moistened.
- Fold in onion and bacon.
- Bake in a preheated waffle iron according to your manufacture’s directions or until golden brown.
- Serve waffles with Maple syrup or apple sauce.
- Optional. Top with more crumbled bacon.
