Bacon Potato Waffles

I know this might be a little out there for some people, but these waffles rock. I like to eat them with sour cream and cinnamon apple sauce. I have been know to make them with a cheese sauce, heart attack on a plate. Remember everything in moderation. Recipe contains dairy and eggs.


  • 1 cup all-purpose flour
  • 2 Tbsp sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 2 eggs
  • 1 ½ cup mashed golden potatoes (with added milk and butter)
  • 1 cup 2% milk (at least)
  • 5 Tbsp canola oil
  • 1/4 cup finely chopped onion
  • 3 bacon strips, cooked crispy, and crumbled


  1. In a large bowl, combine the flour, sugar, baking powder and salt. Mix and set aside.
  2. In another medium bowl, whisk eggs potatoes, milk and oil.
  3. Stir wet ingredients into dry ingredients just until moistened.
  4. Fold in onion and bacon.
  5. Bake in a preheated waffle iron according to your manufacture’s directions or until golden brown.
  6. Serve waffles with Maple syrup or apple sauce.
  7. Optional. Top with more crumbled bacon.
