I know this might be a little out there for some people, but these waﬄes rock. I like to eat them with sour cream and cinnamon apple sauce, I have been know to make them with a cheese sauce, heart attack on a plate. Remember everything in moderation.
- 1 cup all-purpose ﬂour
- 2 Tbsp sugar
- 2 tsp baking powder
- ½ tsp salt
- 2 eggs
- 1 ½ cup mashed golden potatoes ( with added milk and
- 1 cup 2% milk ( at least)
- 5 Tbsp canola oil
- 1/4 cup ﬁnely chopped onion
- 3 bacon strips, cooked crispy, and crumbled
In a large bowl, combine the ﬂour, sugar, baking powder and salt. Mix and set aside.
In another medium bowl, whisk eggs potatoes, milk and oil.
Stir wet ingredients into dry ingredients just until moistened.
Fold in onion and bacon.
Bake in a preheated waﬄe iron according to your manufacture’s directions or until golden brown.
Serve waﬄes with Maple syrup or apple sauce.
Optional. Top with more crumbled bacon.
