Yield: 1 cup (6 servings)
Ingredients:
Dressing:
- 1/2 teaspoon crushed garlic
- 1-3 inch pieces of zucchini, peeled and chopped
- 1 tablespoon prepared horseradish, or ground root
- 1 1/2 tablespoons lemon juice
- 1 1/2 tablespoons light miso
- 1 tablespoon tamari (soy sauce)
- 2 teaspoons agave nectar or honey
- 1/4 cup water
- 1/4 cup + 2 Tablespoons oil
Salad:
- 1 head of romaine, torn or cut into pieces
- Parmesan cheese
- croutons
- freshly ground pepper
Steps:
1. For the dressing: Combine all of the ingredients, except the water and oils, in a high-powered blender, and puree until creamy.
2. While the blender is running, slowly add the water and then the oil, until emulsified.
3. Toss with the lettuce and sprinkle with cheese and croutons. Add pepper to taste.
