Serves 6-8.
Ingredients:
- 5 C chopped Chinese cabbage
- 2 Tbsp rice vinegar
- 3⁄4 C sliced or shredded carrot
- 4 Tbsp sesame oil
- 1 1/2 C chow mein noodles (crunchy ones)
- 3 Tbsp soy sauce
- 1 C crushed peanuts
- 1 Tbsp honey
- 1⁄4 C sesame seeds (black if available)
- 1⁄2 – 1 tsp dry mustard
Steps:
- Combine cabbage, carrot, chow mein noodles, peanuts, and sesame seeds in a large bowl.
- Mix remaining ingredients and toss with cabbage a little at a time.
- Mix in just enough dressing to suit your taste.
