Cold Cream of Cucumber Soup

  • 2 large or 3 medium cucumbers
  • 1 medium onion, chopped (about ¼ cup)
  • 1 C. chicken broth
  • 2 T. flour
  • ¼ t. white pepper
  • ½ t. salt
  • Dash of garlic powder
  • 1 C. sour cream
  • Dill weed for garnish

Pare, seed and coarsely chop cucumbers. Place all ingredients except sour cream and dill weed in a blender or food processor. Blend until smooth. Add sour cream and chill.

To serve, sprinkle dill weed on each serving or float a slice of cucumber.
