I made a quick potato salad for dinner the other night that was simple and delicious. We ate it with grilled chicken breasts and salad mix with blue cheese crumbles.
- 1 pound potatoes- Red French Fingerlings would
- work really well
- 2 T. finely chopped onion
- 1 T. chopped fresh dill
- 1 T. butter
- salt and pepper to taste
Cut up the potatoes into bite-size pieces and steam for about 8 minutes (or until tender). Toss with the remaining ingredients and eat while still warm.
