Fall Harvest Carrot and Raisin Salad

This recipe was created at Relish Deli when I needed a new Panini sandwich. Served it in a Panini with roasted turkey muenster cheese–made for an awesome Panini. It is also a great side salad anytime. Recipe contains dairy.


  • 1 pound carrots, peeled and shredded
  • 1 ½ cups apples (I use macs, or granny) cored and sliced thin
  • 1/4 cup dark raisins
  • ½ cup sour cream
  • 1/3 cup skim milk
  • 1 Tbsp lemon juice
  • 1 ½ tsp sugar
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cinnamon


  1. Combine carrots, apples, and raisins in a large bowl. Toss.
  2. In a separate bowl combine remaining ingredients, mix until well blended
  3. Pour dressing over carrot mixture and toss until coated. Refrigerate until chilled.
