Rhubarb Sauce

From farmer Laura’s kitchen


  • 1 bunch of rhubarb, chopped into 1/2 inch pieces
  • 1/4 C. water
  • Sugar or honey to taste- 1/2 to 1 cup usually


  1. In a small saucepan, combine the chopped rhubarb and water. Cover and cook over medium heat for ten minutes or until the rhubarb breaks down. Stir in sugar or honey until it is as sweet as you’d like it.
  2. It will have the consistency of thin applesauce and can be eaten the same way- on it’s own, over ice cream, stirred into oatmeal, or my favorite- atop a bowl of homemade plain yogurt with a swirl of honey. A squeeze of orange is nice in there, too.
