In From Asparagus to Zucchini
- 1 onion, chopped
- 1 garlic clove, minced
- 2 T. oil
- 1 bunch Swiss chard, chopped
- 6 eggs
- 1 C. shredded cheese
- 1 t. salt
- 2 pie crusts
Brown onion and garlic in oil. Add chard and cook down until wilted. Beat eggs; mix in cheese, salt and chard mixture. Pour into 2 pie crusts. Bake at 400 30-40 minutes or until a knife inserted in the middle comes out clean.
Makes 2 pies.
