Swiss Chard Pie

In From Asparagus to Zucchini. Makes 2 pies. Recipe contains eggs and dairy.

Ingredients:

  • 1 onion, chopped
  • 1 garlic clove, minced
  • 2 T. oil
  • 1 bunch Swiss chard, chopped
  • 6 eggs
  • 1 C. shredded cheese
  • 1 t. salt
  • 2 pie crusts

Steps:

  • Brown onion and garlic in oil.
  • Add chard and cook down until wilted.
  • Beat eggs; mix in cheese, salt and chard mixture.
  • Pour into 2 pie crusts.
  • Bake at 400 for 30-40 minutes or until a knife inserted in the middle comes out clean.
