Ingredients:
- 1 lb new red potatoes, cut into 1 inch pieces
- 1 green pepper, chopped
- 1/2 onion, chopped (or however much you’d like)
Steps:
- Steam the cut potatoes for 8 minutes, or until tender.
- Meanwhile, sauté the peppers and onion in a little butter or oil for a few minutes.
- Toss the potatoes, peppers and onions in a bowl with a little salt and pepper. Simple, easy and a great flavor combination!
