Quinoa Tabouleh

  • 1 C. quinoa
  • 1 3⁄4 C. water
  • 1⁄2 C. raisins
  • 1⁄4 C. lemon juice (1 large lemon)
  • 1 T. olive oil
  • 1⁄2 t. salt
  • 1⁄2 C. chopped fresh mint or parsley
  • 1⁄2 C. chopped cucumber
  • 2 T. onion, minced
  • 1⁄4 t. black pepper

In a saucepan, bring quinoa and water to a boil. Cover and simmer 20 minutes or until the liquid is absorbed. Remove from heat, stir in remaining ingredients. Cover, let stand for 1 hour. Serve chilled or at room temperature.

Serves 4-6.
