Serves 4-6.
Ingredients:
- 1 C. quinoa
- 1 3⁄4 C. water
- 1⁄2 C. raisins
- 1⁄4 C. lemon juice (1 large lemon)
- 1 T. olive oil
- 1⁄2 t. salt
- 1⁄2 C. chopped fresh mint or parsley
- 1⁄2 C. chopped cucumber
- 2 T. onion, minced
- 1⁄4 t. black pepper
Steps:
- In a saucepan, bring quinoa and water to a boil. Cover and simmer 20 minutes or until the liquid is absorbed.
- Remove from heat, stir in remaining ingredients. Cover, let stand for 1 hour. Serve chilled or at room temperature.
