Red and Green Cabbage Salad

In From Asparagus to Zucchini

  • 4-5 C. finely sliced or shredded red cabbage
  • 4-5 C. finely sliced or shredded Chinese cabbage
  • ½ C. finely chopped onions
  • Combine cabbages and onion. Toss with Thai-Style Fresh
  • Herb Dressing. Serve immediately or chill ½ hour.

Thai-Style Fresh Herb Dressing

  • 2 t. minced garlic pressed to a paste
  • 1 hot chili seeded and minced
  • 3 T. rice vinegar
  • 1 T. soy sauce
  • 1 T. tahini, peanut butter or cashew butter
  • 2 T. olive oil
  • 2 T. dark sesame oil
  • 2 T. each chopped fresh mint, cilantro and basil

Combine all ingredients.
