Potato Salad

Here is a general potato salad recipe. Potato salad is one of those things that you can easily get creative with and make substitutions. You could make this recipe with everything in your box–carrots, scallions, broccoli, turnips and kohlrabi. Then you could serve it on a bed of lettuce! I also add dijon mustard to my potato salad. Serves 8-10

Ingredients:

  • 5 cups potatoes, cooked
  • 3 t. vinegar
  • 3 t. sugar
  • 1 1⁄2 t. salt
  • 3 t. celery seed
  • 3⁄4 c. onion, chopped
  • 1 1⁄2 c. chopped celery
  • 6-8 hard boiled eggs, sliced
  • 1 1⁄2 c. mayo

Steps:

  1. Cook potatoes and peel. (I cook them 40-45 minutes, depending on the size.)
  2. Add next 5 ingredients, toss, and allow to cool.
  3. Add remaining ingredients and toss. Chill before serving.
